Creamy mac and cheese ham bake
Bring 3 quarts of water to a boil for cooking the macaroni. Add salt to taste. Add the macaroni and cook 10 to 12 minutes, or until tender. Drain and return to pot.

Mac and Cheese with Ham
Melt 2 tablespoons of the butter in a saucepan and add the flour, stirring with a wire whisk. Cook for about a minute; then add the milk, stirring rapidly with the whisk. Let simmer about 1 minute and add the nutmeg, Cheddar cheese, and salt and black pepper to taste. Heat the remaining tablespoon of butter in a skillet and add the onions and mushrooms. Cook, stirring, until the mushrooms are wilted. Add the ham and cook, stirring, about 1 minute.

My breadcrumbs were from cinnamon swirl toasting bread. Very very good. Everyone around my table exclaimed this dish to be quite a treat. It has been years since I made macaroni and cheese. This did not disappoint. This recipe is awful.
Luckily, I tasted the cheese sauce before ruining the pasta, so it wasn't a complete disaster, just a waste of time and cheese. I recommend finding another recipe. If you use regular or fat free half and half in place of the milk you will not have to worry about the recipe curdling.
I learned this 24 years ago in cooking school and have used it in several restaurant kitchens with sucess everytime. At home I use the fat free version and you can not tell the difference. I use the half and half in any recipe that calls for milk. I use it in soups, mashed potatoes, dips, eggs, pastas all with great success.
I made a Paula Deen recipe and it also curdled for a party and could not serve it. See Recipes. Pasta will cook slightly more while baking in the oven which is why you want it cooked to 'al dente'. While pasta is cooking, combine cheddar cheese soup, sour cream, milk, and the seasonings in a large mixing bowl.
Mix with a whisk to combine well.
Drain the pasta. Do not rinse. Pour into the prepared baking dish and cover with foil. Cook for 25 minutes. Remove foil and sprinkle cheese on top of casserole. Cook for another minutes or until the cheese is melted. The cheddar cheese soup is made by Campbell's brand. It's just like the cream of chicken soup but cheddar cheese instead. We just heat the leftovers in the microwave and we love it as is.
If it's too dry for your liking, simply add a small splash of milk to moisten it up a bit.
